Basa Bhojan

Classic pakhaḷa bhata. Cooked rice soaked overnight in lightly spiced kanji water, tempered with garlic, mustard seeds, and curry leaves. Refreshing, light on the gut, but layered in flavor. A summer staple in Odia homes.
